One of the perks of heading out to the town beach is the location of Seawell Seafood at the end of Atlantic Avenue.  After a late afternoon trip to the beach we swung by and picked up some Stonington Blue Fish for dinner.  This oily, dark fleshed fish was remarkably light in flavor and perfect for these super hot nights we’ve been having.  We soaked ours in sherry vinegar, salt and pepper for 30 minutes and then dried it off with a paper towel.  We cooked it in a shallow frying pan skin side down until crispy and then flipped it for an additional three minutes.  Ours was served with quick pickled vegetables, lettuce from the garden and a few roasted potatoes.  Delicious, local and so lovely when paired with lettuce from our own garden.  Stop in and see what other local fish selections you can find on your trip home from the beach.
