I have a confession…despite the hype, until recently I had never eaten an olive oil cake. So when I saw this gorgeous rosemary olive oil cake at Mystic Market I had to bring it home. How pretty is this?! Not only does it look great, it tastes wonderful. This cake was moist but not overly so, and the frosting had just enough sweetness to balance out the flavors. The rosemary was subtle- so much so in fact that you really only got a hint of it every now and then. These little cakes would be perfect for upcoming holiday parties or just to treat yourself to something special. They are big enough to share with a friend…but they are also the perfect size for one, if you have a sweet tooth. Mystic Market has so many lovely treats that it is hard to leave with just one!
